Workday Pork Butt

My oldest son graduated from college this past weekend.

It is sort of hard to believe I'm old enough to have a kid this old .... but ... anyway ...

We had some family in town to help celebrate, and my wife thought I should cook on Friday when the family was going to be arriving.

It was a work day for me, but I decided to smoke a Pork Butt.

Generally, it takes me about 8 hours to smoke a Pork Butt on my Weber Kettle.

Since I work at home, and making pulled pork is mostly just waiting for the pork to slowly cook, it was a very do-able activity while doing my job.

I pretty much had the butt seasoned and the Weber Kettle going by 6:30 AM.


The pork shoulder was on a few minutes later.


I cooked with my ugly-snake method and had some hickory wood and apple wood on there for smoke flavor.


I had my wireless temperature probe set up to keep an eye on both the "oven temp" and the internal temperature of the meat.

This is very convenient for multi-tasking.


Over the first hour or so, the oven temperature was below 250 degrees, but the internal temperature rose steadily.


Around 9:20 (about 3 hours into the cook), the oven temp was up to 253 and the internal temperature had hit 112 degrees.


Around 9:45, the oven temp was up to 260 and the internal temperature was 120.


An hour later, the oven temp was 261 and the internal temperature was 148.


At 11:15, the kettle temp was 157, and the internal temperature measured 157. The bark seemed pretty well formed, so I wrapped the butt.

Then, I just pretty much let the meat cook without paying too much attention to it.

I even got a short "Lunch Ride" in.


After 6 hours into the cook (around 1pm), I did notice that the "oven temp" was 271 and the meat's internal temperature was 188.

I don't remember exactly, but I think it was around 3pm that the pork was at 203 and "probe tender".

I pulled it off and put it in the crock pot set to "Warm" to wait until supper time.

We had it on buns for pulled pork sandwiches.

Everyone said they thought it was awesome.

Easy meal to make even on a work-day.


The rest of the weekend was fun. My son graduated. Both my boys gave me and their grandfather a great Fathers' Day. 

The weekend went too fast.
