Around mid-September, I brewed my Falling Leaves Autumn Saison.
Yes, I am still way behind on posting brew days on this blog.
Falling Leaves is, of course, the Autumn version of my Seasonal Saisons series of beers. It is darker in color than the Spring and SummerSaisons, but not as dark as the black Winter Saison.
It gets most of its color from a Dark Munich malt from Gambrinus Malting Corporation. The malt flavor is heavily Munich breadiness, but it does have the distinct French Saison taste from the yeast and lots of late Saaz hops.
It is a delicious beer.
As far as I remember, the brew day went well.
Based on these pictures, most of the brew day was done in the dark. My notes say that the wort was in the fermentor by 7AM.
It looks like the OG was lower than expected, but that doesn't bother me. My boil was only 60 minutes this time as opposed to my normal 90 minute boil.
Fermentation went fine. FG was 1.007, which is pretty good. The ADF was 85%, which isn't quite what I am used to out of this yeast, but the flavor is perfect.
The beer turned out great.
It is about half gone.
