In this ... Susie used the term Kettle Fried Chicken. She pointed out that this stands for KFC ... which amused me.
A little later, I came across another video from Postal BBQ.
The recipes were pretty similar.
I thought I'd like to try to make fried chicken on my Weber Kettle.
Last Saturday, I gave it a try.
The recipe I decided to go with was:
- 2 cups all purpose flour
- SheppyBrew Seasoning
- ⅓ cup corn starch
- 2 cups buttermilk
- 2 eggs
Combine dry ingredients in a separate bowl.
Dip each piece of chicken into dry mix. Then, into wet mix. Then back into flour.
Dip each piece of chicken into dry mix. Then, into wet mix. Then back into flour.
Bring the kettle up to temperature (both videos called for 400 degrees).
Place chicken on grill.

Flip every 15 minutes. Spray with cooking spray to help crisp up.
Cook until the breading is golden and crisp. Both videos seemed to take between 45 minutes to an hour.
Make sure internal temperature of the chicken is over 170 degrees.
In reality ... my kettle was closer to 300 to 350. As a result, my cooking time was closer to 1.5 hours.
I'm not sure if I didn't use enough fuel or if the temperature / wind just wasn't ideal.
I gave myself plenty of time, so it was ok.
Overall, the chicken turned out nice.
I would have preferred more crispy skin. I assume if I had been able to get the temperature up higher and/or could have had the chicken on longer, it would have been better.
I'm going to have to play around with this at a later date.
