Hickory Smoked Mac and Cheese

So ... I don't make it a whole lot, but my kids REALLY like my smoked mac and cheese.

Well ... not just my kids. Just about anyone who has ever tried it has raved about it. I love it too. Unfortunately, it isn't the healthiest of meals, and that comes from someone who makes a ton of BBQ.

Anyway ... a couple weeks ago, my older son had his girlfriend over and my son requested that I make my smoked mac and cheese.

 
If you're interested in a recipe ... I posted sort of what I do on Smoked Mac and Cheese. Of course I never really follow recipes, so I can't claim that I've ever actually done Mac and Cheese exactly as I posted.

It seems like a good starting point, though.


Generally, I always feel like I should add more cheese than any recipe says, and so I generally do that.

I also tend to experiment on adding different meats.

I literally have never made a smoked Mac and Cheese exactly the same.


Anyway ... this time I made it with bacon and sausage. The noodles I got were bigger than usual. I probably mostly followed the Smoked Mac and Cheese recipe as posted.

But really, who knows?


It did turn out fantastic. Everyone loved it and everyone ate too much. 

It was convenient because it was the week before the 2025 Triple Bypass Ride, so it helped with my carb loading and getting fueled for a ridiculously long bike ride.

The leftovers lasted me and my kids several meals that week.
