Smoked Chicken Green Chili

So ... I had a work potluck on May 4th (May the Forth Be With You). We had a weird Mexican / Star Wars theme. Strange, but it works.

I decided I wanted to make green chili with smoked chicken Thursday night.

Given that I would not have a lot of time for smoking the chicken, it being a work-night and all, I decided to start with boneless skinless thighs.

Along with the chicken, I smoked some Anaheim and Jalapeno chilies. It took around 2 hours to smoke the things and stuff and not too much longer to get everything combined in the crock pot.

It really turned out great. My dish did not last long at all at the potluck.




Here is the recipe ....

3 lbs Boneless skinless chicken thighs
Taco Seasoning
4 Anaheim chiles
1 Jalapeno pepper


¼ cup cooking oil
1 medium onion
Cilantro (½ cup finely chopped fresh)
Minced garlic
2 tbsp all-purpose flour


Kosher salt
Black pepper
1 tsp cumin
1 tbsp lime juice
One 28-ounce can crushed tomatillos (blended)
3 cups chicken stock
1 cup beer


Steps:
Use taco seasoning as a rub on the chicken.
Put chicken and Anaheim chilies and jalapeno pepper into roasting pan.
Smoke for 2.5 hours at about 250.
chilies and pepper came out before that time.

Heat oil
Chop up chiles, pepper, and onion
Add to oil along with cilantro and garlic.
Saute for 10 minutes
Add flour and cook 3 more minutes

Blend tomatillos
Put everything into crockpot.

Cook on low for 8ish hours. 

At work, I had the crock pot on low for several hours as well.


I loved how it turned out. I will absolutely make this (or something close to it) again.

I would like to try this with smoked pork butt. Maybe sausage. More heat. Less heat.

The options are endless.
