Pork Butt Burnt Ends

Remember that in Pork Butt Steaks, I cut about half of a pork butt into steaks.

The other half, I vacuum sealed and froze for a future meal.

On the same day I did 2024 Hail Storm Summer Saison (batch 359), I cooked that other half.

I decided to cut the meat into cubes and do Pork Butt Burnt Ends.

Pork Butt isn't a real common cut to make Burnt Ends. Usually, you hear about them made with the point of a brisket

or ... 

Sometimes people use the pork belly cut for burnt ends.

But, I have come across a few posts over the past few weeks talking about Pork Butt Burnt Ends, and on Sunday I gave it a try.


It isn't real complicated. I cut the butt into "cubes" (not very precise from a geometric definition), and added a rub.

I let those sit in the fridge for a few hours.


Around 6 hours before dinner time, I got those cubes on the grill.

I cooked those with heavy hickory smoke at a fairly low temperature for about 3 hours.



At some point during that 3 hours, I made some of my homemade BBQ Sauce. 


At about 3 hours in, the meat was dark and smokey.


I placed the "cubes" into a foil pan along with the BBQ Sauce, covered them up and let them "braise" for a couple of hours.


After this two hours, I took the cover off and let them cook uncovered for 45ish minutes.


Then I let them rest a few minutes and served to the family.


I think the half pork butt was about perfect for our little family of four, but my oldest son was off doing other stuff at dinner time, so we did have leftovers.

Yum!

I liked them. I'd like to try other type of burnt ends before I do this type again.

If I do them again, though, I do think I can cut the cooking time by about half and hour to a whole hour.

Also, I think maybe I should cut down on the spiciness of the BBQ Sauce. It might have been a little "hot" for my wife and younger son.


And ... I think I'd like to try other types of burnt ends before I do this again. I guess we'll see ...
