For whatever reason, my Sam's club hasn't had them when I looked, and my wife didn't see any at our grocery store when I asked her to look last time she was there.
Some time ago I saw a youtube video where someone (I don't remember which channel this was on) removed the bone from a port butt.
Since I wasn't finding pre-cut pork steaks, I thought I could simply make steaks out of a pork butt.
So ... I got a pork butt from Sam's and cut it up this past Tuesday.
Early in the morning, I cut the bone out of the shoulder. It went pretty good, but I am sure with more experience I'd be better at this process.
The bone wasn't quite as clean of meat as a couple of youtube videos I watched.
Anyway ... once the bone was out, I simply cut half of it into steaks. I seasoned these and left them in the fridge until it was time to cook them.
I vacuum sealed the rest of the shoulder and froze it for something I'll try some other time.
Keep an eye on this blog, and you might see what I do with it.
I fired up the trusty Weber Kettle with some hickory chunks around an hour before dinner time.
And, then I cooked them on the indirect heat side for a little over half an hour.
I also threw the bone on the kettle to gnaw on later, making me feel like I wasn't wasting the meat I had left on the bone.
After cooking indirect, I seared them all about 4 minutes per side over the direct heat.
They turned out real good. I actually think I like these slightly better than the pre-cut steaks I've cooked in the past.
I think I'll do this again in the future. I might even start to get better at removing the pork bone.
I did gnaw on the bone for a lunch, and it was pretty good as well.
Again, I have something planned for the rest of the shoulder, and I expect that I'll blog about it sometime soon-ish.
