Appearance
Pale golden with a faint amber hue from the touch of specialty malt. A dense, creamy white head crowns the glass and lingers like a milk mustache on a happy cow. Brilliant clarity shows off the beer’s clean fermentation and careful conditioning.
Aroma
Soft grain sweetness and a whisper of corn mingle with light floral hops. There’s a subtle fruity note — pear and apple from the Kölsch yeast — balanced by a rustic, countryside freshness that evokes barns, fields, and gnomes laughing over pints.
Flavor
Starts crisp and lightly sweet, then opens into smooth malt and gentle corn character. Noble hops add a delicate herbal edge without bitterness. The finish is clean and refreshing, with just enough residual sweetness to invite another sip. A Kölsch at heart, but with a playful cream‑ale soul.
Mouthfeel
Medium‑light body with a silky texture from the corn and low carbonation. Smooth and easy‑drinking, yet lively enough to stay bright. The balance of softness and crispness makes it perfect for warm afternoons and backyard sessions.
Overall Impression
A whimsical hybrid — part Kölsch, part cream ale, all SheppyBrew. Wild Cow (sort of) Kölsch delivers the easy drinkability of a Wisconsin farmhouse beer with the precision of a German ale. Corn‑fed and gnome‑approved, it’s a beer that doesn’t take itself too seriously but still shows off your brewing finesse.
The Legend of Wild Cow
Long before SheppyBrew brewed its first Kölsch‑ish pint, the hills around the brewery were said to be home to a peculiar creature — the Wild Cow. Not a normal cow, mind you. This one wandered the meadows with a swagger, eyes bright with mischief, and a taste for freshly‑fermented wort.
The gnomes claim she was born during a thunderstorm when a bolt of lightning struck a forgotten mash tun left out in the pasture. The blast infused a wandering dairy cow with the spirit of brewing itself. From that day on, she roamed the countryside, nudging open cellar doors, sampling grain sacks, and leaving hoofprints suspiciously close to fermenters.
Legend says the Wild Cow eventually befriended the local beer gnomes — tiny, rowdy creatures who believed any good brew deserved a little chaos. Together they’d sneak into brewhouses at night, adding a pinch of corn here, a dash of Kölsch yeast there, giggling as they “improved” the recipes of unsuspecting humans.
One morning, SheppyBrew’s brewer found a fermenter bubbling with a beer he didn’t remember making. The aroma was crisp, sweet, and strangely rustic. A set of muddy hoofprints circled the tank. A tiny gnome hat floated in the blowoff bucket.
Realizing he had been visited by the legendary duo, he tasted the beer — and it was good. Clean, bright, a little sweet, unmistakably Kölsch… but with a playful twist that could only come from a cow who thought she was a brewer.
Thus was born Wild Cow (sort of) Kölsch — a beer inspired by the creature who refuses to be ordinary, crafted in honor of the gnomes who never follow the rules, and brewed for anyone who believes great beer should come with a grin.
Some say the Wild Cow still wanders the hills, keeping an eye on the brewery. And if a batch turns out especially smooth, especially crisp, or especially mischievous… well, you know who visited.
