Smoked Mac-n-Cheese

My son is home from college for Spring Break.

His favorite thing I smoke is Smoked Mac and Cheese, and so I made a batch this past Saturday.

He also wanted to go hiking on Saturday. Since my kids don't get up until fairly late in the day, I prepared the Mac and Cheese in the morning so I could just throw it on the smoker in the afternoon.

It is basically the recipe I (sort of) followed.

I started by cooking the bacon on my grill.

As the bacon was cooking, I started the sauce inside on our stove.



When the sauce was almost done, I cooked the noodles.


Then, I combined the noodles, let them cool a bit and put this combination in the fridge.

We went up to the mountains for a hike.


When we got home, I shredded cheese to mix in with the sauce and noodle and placed this into a pan.

I shredded up some more cheese for the top. I put that back in the fridge until it was time to start cooking.


I used my smoker with charcoal and hickory chunks for about an hour and a half. The thermometer read around 350 most of the time. 


At about dinner time, the mac and cheese was gooey and bubbling.


We ate and enjoyed.

I might have enjoyed it a bit too much. I had too many servings.

Oh well.

It was really really good. Everyone really liked it.
