Bacon Wrapped Tenderloin

Sometime over the weekend, I picked up some pork tenderloins from my local Sam's Club.

According to a search I just did on this blog, I've never blogged about making pork tenderloin, but I think maybe at least one of my Sheppy's Blog: Pork Loin posts may have actually been tenderloin.

It honestly doesn't matter. The only difference between how I would cook the two is that the pork loin would probably cook just a bit longer.

Anyway ... Tuesday, I wrapped these tenderloins in bacon, applied some rub and cooked them up on the Weber Kettle.

Guuud stuff.

Mac and Cheese on the Kettle

My youngest son graduated from High School this past weekend.

This makes me feel old. Where did all the years go? As they say ... "The days are long. The years are short".

Anyway ... with my oldest son visiting to celebrate his little brother, I made my world-famous comfort food ...


I made it a little different than I ever had before. Usually, I use either bacon or sausage as the meat. This time I used both.

And ... the bacon was just laying on the top of the dish as opposed to having it mixed into the noodles and cheese mixture.

Bursting Fatty

So ... I've only made Fatties a couple of times in my life, both of them documented on this blog.

See Easter BBQ and Fatty!

I decided to make another one a couple weekends ago, the same day I brewed my X-Mas Ale

In case you don't know ... a fatty is ground meat surrounding a filling wrapped with bacon.

In my case, the filling was a mixture of cream cheese, cheddar cheese, and onion with spices. 

The ground meat was 1 (or more) pound each of ground Italian sausage and ground beef.

Last time I made a Fatty, the filling burst out of the side, making a little mess and making me lose a little of the gooey goodness.

Hickory Smoked Mac and Cheese

If you follow this blog ... you may have read this before ... but my kids really like the Smoked Mac and Cheese that I make.

Whenever my oldest is home from college, and we ask if there is anything he'd like to request, Smoked Mac and Cheese is close to the top of the list.

He has been home for Spring break, and Saturday I made some.


I'm not real good at following recipes, but my reference starting point is always the one I have listed on "Smoked Mac and Cheese".

Fatty!

Remember my Easter BBQ

Along with my Ribeye Roast, I smoked a bacon wrapped fatty.

What is a fatty? 

Well ... a fatty is ground meat surrounding a filling wrapped with bacon.

In my case, the filling was a mixture of cream cheese, cheddar cheese, and onion with spices. 

The ground meat was 1 pound each of ground Italian sausage and ground beef.

The bacon was ... well bacon.

This past weekend, I thought I would like to make another fatty. 

So I did.

Easter BBQ

My wife (aka The SheppyBrew Beer Model) let me decide what to have for Easter dinner this year.

Awesome.

Around holidays, I enjoy getting Ribeye Roasts because they are generally about half the price as usual around holidays. 

And, I figured I'd pick one up for Easter this year.

Because ... I like to cook them on my smokers. And ... because I really like eating them.

Yum!

When I got to my local grocery store to pick one up, there were two available. They were both around 12 pounds.

A 12 pound Ribeye Roast is more meat than a family of 4 needs, but I have a vacuum sealer and a freezer, so I figured I could save half for some other time.

Smoked Mac-n-Cheese

My son is home from college for Spring Break.

His favorite thing I smoke is Smoked Mac and Cheese, and so I made a batch this past Saturday.

He also wanted to go hiking on Saturday. Since my kids don't get up until fairly late in the day, I prepared the Mac and Cheese in the morning so I could just throw it on the smoker in the afternoon.

It is basically the recipe I (sort of) followed.

I started by cooking the bacon on my grill.

As the bacon was cooking, I started the sauce inside on our stove.

Brewing Near-Sighted Swine IPA

I don't make a lot of IPA's, but the other day I started thinking I really should get one brewed.

Quite awhile ago I brewed an IPA that I really enjoyed, named Near-Sighted Swine IPA. Rather than come up with a new recipe, I decided to use this one.

I did update the hops a little. But, it is essentially the same recipe as it was back then.

Last Sunday (not this past Sunday ... the one before), I brewed the beer.

I started the brew day somewhat late for me ... after the sun was up ... around 6AM or so.

The skies looked like rain, but I started on the back patio.

About the time that the mash was done, I felt a bit of rain hit me from the skies and I made the decision to move the garage.

Smoked Mac and Cheese

So ... I got to use my smoker a couple times last weekend.

Recently, I posted articles about Bacon Wrapped Onion Bombs and Smoked Salsa. I cooked both of these last Saturday on the smoker.

On Sunday, I made something else on the smoker.

Something even more delicious.

Macaroni and Cheese.  Yum! Yum! Yum!

It was sooooooo Guuuuuuuud.

So Good.

Really when it comes right down to it, there are tons of baked Mac and Cheese recipes out on the internet. Smoked Mac and Cheese is simply doing the same thing ... only cooking it on the grill.

Since I got my Smoker, I've watched lots of Barbecue YouTube videos about smoking and grilling.

I've subscribed to some channels that I enjoy, and the other day a video came across my subscription list.

Oompa Loompa Mango Pale Ale, Kombucha, and Turkey Bacon Burgers

After brewing the Where'd My ManGo Wheat, I had some of the Mango Flavoring left.

Also, my Muggled Pale Ale didn't last real long.

I decided that it would be fun to make and drink a Mango Pale Ale.

Oompa Loompa Mango Pale Ale

I brewed it last Sunday

No big deal.

Some Pale Malt. Some Vienna Malt. Some Munich and some Pale Chocolate for a bit more color.

Equinox (aka Ekuanot aka HBC 366) hops. Centennial hops.
