I subscribe to and watch various BBQ Youtube channels. One of my favorites is Hey Grill Hey.
Recently, Susie had a video called Amazing Smoked Chicken Bombs with a cheesy jalapeno center! So easy anyone can can do it!.
It looked really good, so I decided to give it a try last weekend.
Basically, all you do is stuff jalapeños with a cream cheese mixture, much I have done with Jalapeño Poppers many times.
Then, you wrap those jalapeños in skinless boneless chicken thighs. Wrap those in bacon and cook them until the chicken is cooked and the bacon is crispy.
The pack of chicken I got had 8 thighs in it. I did four of these "Smoked Chicken Bombs" exactly as Susie told me.
I used two of the thighs together with cream cheese stuffing without the jalapeños.
I did two chicken thighs just wrapped in bacon.
I let them cook for about an hour at which point the chicken internal temperature was in the 170s, and the bacon was like I wanted it.
Then, I pulled them off the grill and let them rest about 10 minutes.
Originally, my wife was afraid of the heat from the jalapeños and grabbed the cream-cheese-stuffed thighs.
She finished about half of that and then got a little braver and tried one with jalapeño inside, and apparently liked it.
The peppers were fairly hot, which was awesome for me.
I thought these really turned out great.
Considering my kids are away at college, 8 thighs allowed me to have a couple lunches over the week too.
Wonderful!
