Whenever my oldest is home from college, and we ask if there is anything he'd like to request, Smoked Mac and Cheese is close to the top of the list.
He has been home for Spring break, and Saturday I made some.
I'm not real good at following recipes, but my reference starting point is always the one I have listed on "Smoked Mac and Cheese".
This time, I used slightly difference spices, more cheese, and put some of the bacon on the top rather than mixed into the rest of the meal.
My wife also helped out this time, which isn't usually the case. She grated (most of) the cheese and cooked the bacon.
Other than that, I think I was pretty close to the "Smoked Mac and Cheese" recipe.
It turned out fantastic. I think maybe I would rank it close to the top of the Smoked Mac and Cheese batches that I've made.
Of course, I always love it. I think the extra cheese was good. I think I also liked having some of the bacon on top.
The only problem is that it isn't the healthiest meal. Not really ideal for an old couch-potato such as myself. But, I suppose as long as I only make it on special occasions, that is ok.
Obviously, I'll continue to make this.
