Stuffed Peppers on the Kettle

So ... this past Sunday, I was trying to figure out what to make for dinner. 

I feel like I've been in a little BBQ rut lately, making the same things. Not experimenting all that much.

While thinking about making something new, my google notifications showed that Hey Grill Hey had posted a new youtube video: Grilled Stuffed Peppers.

I had never made Grilled Stuffed Peppers, and figured it would be easy to get ingredients. So, I decided that is what would be for dinner Sunday night.


After a bike ride, and a trip to my favorite LHBS, I stopped by the grocery store and picked up ingredients.

Of course, I have problems following recipes, and actually didn't watch the video or look at the Hey Grill Hey Recipe Page.

I feel like I did ok with the recipe, but missed a couple of key elements.


First, I didn't know that Suzy's recipe called for tomato sauce. Honestly, not a big deal.

But ... the second thing I missed was that Suzy pre-cooks the meat before stuffing the peppers. This actually was more of a big deal.

It did turn out. I just had to cook longer, which made the peppers less crisp (you might say overcooked).


Weather came through right as I was trying to start the grill, which made it difficult to get things started. 

But, I was able to get the charcoal started and the grill up to about the temperature I wanted. It was a little delayed, but not as bad as I thought when the wind kept blowing out my attempts to start the charcoal.


The weather dissipated fairly quickly, and I got things going well. I only swore at the universe a couple times.


After about an hour, I took an internal temperature reading of the pepper stuffing, making sure it was food-safe.

I pulled the peppers off and served them to my wife and kid. (the other kid was off with his girlfriend)


They turned out good, but I do think they would have been better had I followed directions, or at least read the directions.

I'm going to have to make these again the right way. I may not actually use the tomato sauce, but I'll certainly pre-cook everything before stuffing the peppers next time.
