Easter Brisket

I like brisket. I like making brisket. I like eating brisket. It's GUUUUD.

I would probably make it more if it wasn't usually quite so big. 

A 10 pound brisket is about perfect to fit on my 22 inch Weber Kettle, but it is rare to find a brisket in my local Sam's Club (which is where I get my briskets) under 15 pounds.

15 pounds is just a little too big. I can make it work, but it isn't ideal.

So ... whenever I see a 10 pound Prime "packer" brisket at my Sam's Club, I grab it.

Well ... about a week and a half before Easter, I saw an 11 pound packer brisket at Sam's. Close enough. I grabbed it.



And since Easter was coming up so soon, I decided it would be our Easter dinner.


My wife (aka the SheppyBrew Beer Model) likes to eat holiday dinners at 1pm, and of course we had church to go to. 

Thus, I had to start the brisket pretty early in the morning.


I applied a rub on Saturday night ... basically just Salt / Pepper / Garlic. I was up around 2AM to start preparing the grill. 

I had the brisket on the kettle by 2:40 AM.


Then, I went back to bed. I got up again in a few hours and everything was going great. I love the smell of smoking brisket in the morning.

My original plan was to wrap the brisket before we headed off to church, but I didn't think the bark at that time was quite where I wanted it.


When we got back, the bark was where I wanted it, so I wrapped it shortly after getting home.


The brisket was done shortly after that ... a couple of hours before dinner time.

So, I put the wrapped brisket in a cooler for a couple hours.


And enjoyed the day.


Had myself some Mardi Bock.


15 minutes before dinner time I unwrapped the meat and sliced it. I put aside about 1/3 of the brisket freeze for another dinner some time.


I think this was the best brisket I've made. It was tender and juicy and delicious.

Great Easter dinner. We also had "leftovers" later in the evening. 

The Beer Model used some on the following Tuesday for Brisket Stroganoff, which is one of my favorite meals ever.

I had some lunches of brisket sandwich over the week.

... and I have that piece that I put aside for another meal coming up sometime.

I love brisket!
