2024 Thanksgiving Turkey

Since 2018, which was the year I started becoming obsessed with BBQ, I've been in charge of smoking the Thanksgiving turkey outside.

It's fun for me, and it frees up the oven for the various sides my wife generally makes.

And, I think smoked turkey tastes better than it would if we cooked it in the oven.

Over the years, I've tried different ways to cook the turkey, and this year I actually tried something new.

Last year, I spatchcocked, and halved the bird, which is how I generally cook my whole chickens now.

This year, I came across a youtube video where the author "quartered" the bird. I decided to do the same thing on my cook this year.

2023 Thanksgiving Turkey

If you've been following along on my blog, you already knew that ...

1) I was going to smoke a turkey for Thanksgiving

2) I was planning on Spatchcocking and halving it on my weber kettle

3) I was going to use Crack as my spicing.

This past Thursday was Thanksgiving, and I did indeed smoke a spatchcocked turkey on my Weber kettle and spiced it with Crack.

Since 2018, which was the year I started becoming obsessed with BBQ, I've been in charge of making the Thanksgiving turkey outside on my smoker.

2022 Thanksgiving Turkey

Since 2018, it has been my job to make the Thanksgiving turkeys.

I smoke them outside, which is delicious and also frees up the oven to help the wife planning various sides.

Plus, it's fun for me to do.

Win. Win. Win.

This year, of course, I did it again. My wife got me one of the supermarket frozen turkeys that are always on sale, and I started thawing it out the weekend before Thanksgiving.

Wednesday, I unwrapped the bird and put it in a beer brine made with salt, pepper, brown sugar, and my some extra Dudoc's Red IPA that I had in a growler.

2021 Thanksgiving Turkey

This past Thursday (yesterday) was Thanksgiving.

The Sheppy Family generally eats turkey on Thanksgiving. 

Weird ... right? (no not really)

Since 2018 ... I've been in charge of cooking the turkey (see Cherry Wood Smoked Thanksgiving Turkey).

It generally turns out better smoking it on the grill than in the oven. Plus, it is one less thing we have to juggle the plans around what gets cooked in the oven.

Plus, I really enjoy doing it.

So ... 2021 Thanksgiving was my forth time smoking the Thanksgiving turkey.

YUM!

At some point, my wife picked up a 14 pound frozen turkey from our local King Sooper. The kind that is always on sale this time of year.

2020 Thanksgiving Turkey

I smoked my third turkey last Thursday (Thanksgiving).

I'm pretty comfortable doing it now, although since I only smoke a turkey once a year, it still makes me a little nervous that I'll screw it up.

I didn't screw it up. I am pretty sure this was my best one so far.

Last year, I spatchcocked the turkey. I didn't like it as much as the previous year, so I went back to smoking the whole bird without cutting out the backbone.

Just like both my previous turkeys, I brined the bird around 24 hours before cooking it.

It was a simple brine this year.
  • One gallon of SheppyBrew beer
  • 1 gallon water
  • 3/4 cup salt
  • 1/4 cup garlic salt
The brine went into a large plastic bag which I put into a bucket. Over the bag, I put a bunch of ice. I stored that in the garage overnight. 

It was cold enough here in the Denver area to keep the bird cold. There was still ice on top in the morning.

Spatchcocked Cherry Wood Smoked Thanksgiving Turkey

Well ... you may remember that last year I smoked my first Thanksgiving Turkey.

In Cherry Wood Smoked Thanksgiving Turkey, I mentioned that I would probably spatchcock the bird next time I smoked a Turkey.

Well ... this Thanksgiving, was my second opportunity and I did indeed spatchcock the bird.

In case you don't know what spatchcocking is ...

Real quick ... when you spatchcock a bird, you basically cut out its backbone, which allows you to lay the bird flat while it is cooking.

Some people call it "butterflying" the bird.

People do this because it is supposed to more evenly cook the bird. It is also supposed to speed up the cooking process.

To be honest, I've tried it with chickens, and have not found that the spatchcocked chickens turn out better than my "regular" method of cooking a bird.

After this Thanksgiving Turkey ... I am still of the opinion that I prefer birds that were not spatchcocked.

Cherry Wood Smoked Thanksgiving Turkey

Well ... as you know if you've been following this blog, I've taken up barbecue as a hobby.

My wife bought me a smoker as a gift last Christmas, and I've been using it pretty regularly.

One of the things I've really been looking forward to doing is smoking a Thanksgiving Turkey.

If you follow the SheppyBrew Instagram Feed or Facebook Page, you probably know that I did make our family's Thanksgiving Turkey this year on the Smoker.

If I'm honest, I was a bit nervous about doing it. I've never really smoked anything that big, and I certainly didn't want to screw it up.

I've done quite a few whole chickens, though, and a turkey is basically just a big chicken ... right?

As it turns out, it was great, so I was ok.
