Just no BBQ.
I pretty much cooked them as usual for spare ribs.
I believe the last time I posted about BBQ was over a month ago with Pork Butt Burnt Ends.
Of course, I have been cooking BBQ between then and now.
I thought I'd share pictures from some of those cooks.
On Sunday, August 11, I cooked some spare ribs on the weber kettle.
I squared them up into "St. Louis Style" and saved the scraps for a future cook. Then, I tied them up into round rolls to cook.
I pretty much cooked them as usual for spare ribs.
They turned out delicious as always.
On Tuesday, August 13, I cooked "Poor Man Burnt Ends", which are "Burnt Ends" made from a Chuck Roast.
I made these very similarly to how I prepared and cooked the Pork Butt Burnt Ends, slicing the chuck into chunks and smoking them on the kettle for a few hours.
After they had been on the kettle for awhile, I moved them inside to the crock pot for several hours, much like I usually make my shredded beef Chuck Roasts.
Then, I smothered them in BBQ sauce and other sweet things and finished them off on the kettle for an hours or so.
These turned out pretty good, but really nothing special. I don't think I'll do "Poor Man Burnt Ends" again.
On Saturday, August 17, I cooked a whole chicken.
Much like the most recent chickens I've cooked, I spatchcocked and halved the chicken and cooked them on the kettle with the votex.
These turned out deliciously juicy with a nice apple-wood smoke character. Pretty much perfect for a chicken.
So, If you've been missing BBQ, this will satisfy you for a bit.
